Eating healthy sounds easy until it’s 7 p.m., you’re starving, you forgot to defrost the chicken and the thought of chopping approximately 47 vegetables feels like a nightmare.

I wanted healthy dinner recipes that actually fit into my real life, nothing that requires an hour of prep, a sink full of dishes, or a sudden interest in becoming a professional chef.

So I rounded up seven dinners you can easily make this week. These healthy dinner recipes are quick, filling, and very much giving lazy girl who still wants to eat well.

We’re talking bowls, flatbreads, pasta, tacos, prawns and even a no-fuss chickpea salad. Basically, enough variety to get you through the week without eating the same sad salad every night.

And because we’re keeping things realistic, every recipe gets a Lazy Rating based on how much effort it takes to get dinner on the table (with 10 being the least amount of effort).

1. Spicy Salmon Poke Bowl

If you want a dinner that looks like you put in way more effort than you actually did, this spicy salmon poke bowl is it. It’s fresh, colorful and packed with all the things that make a bowl actually satisfying: salmon, creamy avocado, crunchy cucumber and fluffy rice, with a spicy, creamy sauce tying everything together.

The best part? There’s very little cooking involved. Once your rice is ready, you’re basically chopping, mixing and assembling.

What you’ll need

  • Sushi-grade salmon, cut into bite-sized cubes
  • Cooked white rice
  • Avocado
  • Cucumber
  • Spring onions
  • Fresh ginger, finely grated
  • Garlic
  • Mayonnaise
  • Gochujang
  • Soy sauce
  • Rice vinegar
  • Everything bagel seasoning

How to make it

Start by preparing your rice and allowing it to cool slightly while you prepare everything else.

This delicious Greek chicken flatbread is a perfect low effort healthy dinner. It’s loaded with juicy seasoned chicken, creamy tzatziki, crunchy cucumber and fresh vegetables, all finished with lemon, coriander and a little sumac.

It looks restaurant-worthy, but most of the work is simply cooking the chicken and assembling everything on a flatbread. When I’m looking for quick healthy dinner recipes, my priority is simple: minimal prep, minimal cleanup and maximum flavor.

What you’ll need

  • Chicken breast, cut into bite-sized pieces
  • Flatbreads
  • Tzatziki
  • Cucumber, sliced
  • Tomato, diced
  • Red onion, thinly sliced
  • Fresh coriander, chopped
  • Lemon
  • Garlic powder
  • Onion powder

How to make it

This is a quick and easy healthy dinner recipe for when you want something comforting and impressive but absolutely do not want to do the most. It’s creamy, garlicky and packed with pistachio and basil flavor, but the actual process is ridiculously simple.

And yes, the chickpea fusilli makes this one more high-protein and a little more interesting than your standard pasta dinner.

What you’ll need

  • Chickpea fusilli or your favorite pasta
  • Fresh basil
  • Pistachios, shelled
  • Garlic
  • Parmesan
  • Single cream
  • Extra virgin olive oil
  • Salt
  • Black pepper

How to make it

Cook the pasta according to the package instructions, reserving a little pasta water before draining.

Notice, how I said “cook the pasta” and not “make from scratch” like Nara Smith. We’re not making the pasta, growing the basil, harvesting the pistachios and churning the cream from scratch 😭. We’re making dinner in 20 minutes, babe.

For the pesto, blend the basil, pistachios, garlic, Parmesan and olive oil until you have a thick, vibrant green sauce. Add a splash of pasta water if needed to loosen it.

Add the pesto to your cooked pasta along with the single cream and toss everything together over low heat until creamy and well coated. Season with salt and plenty of black pepper, then finish with extra Parmesan.

Why it’s so lazy: The pesto does all the heavy lifting. Once your pasta is cooked, you’re basically mixing everything together in one pan. No complicated sauce, no endless chopping and barely any cleanup.

4. Chicken & Avocado Tortilla

These are basically chicken tacos for when you want something that feels like a proper dinner but takes almost no time. The chicken is seasoned with taco seasoning and cooked until golden, then tucked into mini corn tortillas with creamy avocado, fresh onion, coriander and a squeeze of lime.

They’re fresh, filling and just spicy enough without requiring a million ingredients.

If you’re looking for chicken recipes for a healthy dinner, the Greek chicken flatbread, spicy chicken tortillas and lime + coriander chicken are three easy options to try on this list.

What you’ll need

  • Chicken breast or chicken thighs, cut into small pieces
  • Mini corn tortillas
  • Avocado
  • White or yellow onion, finely diced
  • Fresh coriander, chopped
  • Fresh jalapeño
  • Lime
  • Taco seasoning
  • Garlic powder
  • Salt
  • Black pepper
  • Olive oil

How to make it

Cut the chicken into small bite-sized pieces and season generously with taco seasoning, garlic powder, salt and black pepper.

Heat a little olive oil in a skillet and cook the chicken over medium-high heat until golden brown and cooked through.

Warm your mini tortillas in the same pan or a separate skillet. Mash or slice the avocado and add it to the tortillas, followed by the seasoned chicken, diced onion, fresh coriander and a little jalapeño.

5. Spicy Shrimp Rice Bowl

This is a healthy dinner recipe that looks like you actually know what you’re doing in the kitchen, when really the shrimp cooks in a few minutes and the rest is basically thrown together. The shrimp gets coated in a sweet, spicy and tangy sauce, then served with fluffy rice and creamy avocado.

It’s colorful, filling and has plenty of flavor without requiring a complicated recipe.

What you’ll need

  • Peeled shrimp/prawns
  • Cooked white rice
  • Avocado
  • Fresh coriander
  • Red onion, finely diced
  • Garlic
  • Honey
  • Apple cider vinegar
  • Lime
  • Red chilli peppers
  • Chilli flakes
  • Black sesame seeds
  • Olive oil
  • Salt

How to make it

Season the peeled shrimp with salt, black pepper, garlic and chilli flakes. Heat a little olive oil in a skillet and cook the shrimp until golden and cooked through.

Add a drizzle of honey, a splash of apple cider vinegar and a squeeze of lime, tossing everything together until the shrimp is coated in the sweet and spicy glaze.

Serve the shrimp over cooked rice with sliced avocado, diced red onion and fresh coriander. Finish with chopped red chilli, black sesame seeds and another squeeze of lime.

Why it’s so lazy: Shrimp cooks incredibly quickly, and the sauce takes about 30 seconds to throw together. Once your rice is ready, everything else is just assembling your bowl.

Lazy girl shortcut: Use frozen peeled shrimp and leftover rice. You can also use powdered garlic instead of fresh garlic so there’s absolutely no chopping required. Because if we’re calling it lazy girl dinner, we’re definitely committing.

6. Lime + Coriander Chicken

This is a low effort high reward healthy dinner recipe. The chicken gets coated in a smoky, spicy-sweet marinade with lime, coriander and honey, then cooked until beautifully charred. Finish it with fresh coriander, jalapeños and plenty of lime and you’ve got a seriously flavorful dinner with minimal effort.

What you’ll need

  • Chicken breast or boneless chicken thighs, cut into bite-sized pieces
  • Fresh coriander, chopped
  • Lime
  • Honey
  • Jalapeño slices
  • Apple cider vinegar
  • Olive oil
  • Ground cumin
  • Ground coriander
  • Chipotle chilli flakes
  • Red pepper flakes or Aleppo pepper
  • Salt
  • Black pepper

How to make it

Add the chicken to a bowl and season with cumin, ground coriander, chipotle chilli flakes, red pepper flakes, salt and black pepper. Add a drizzle of olive oil, honey, apple cider vinegar and plenty of fresh lime juice, then toss until the chicken is evenly coated.

Heat a skillet over medium-high heat and cook the chicken until browned, slightly charred and cooked through. The honey will help create those gorgeous caramelized edges.

Remove from the heat and finish with fresh coriander, sliced jalapeños and another squeeze of lime.

Why it’s so lazy: There’s no complicated sauce to make and no long marinade required. You season the chicken, throw everything into one pan and let it cook. The hardest part is deciding what to eat with it.

7. Chicken Caesar Salad

Finally, for the night when you genuinely cannot face turning on the stove: salad.

But not a boring handful-of-lettuce salad.

A Caesar salad is already one of my favorite lazy-girl dinners, but adding crispy breaded chicken takes it from side salad to an actual meal. This version gives you crunchy chicken, crisp romaine, creamy Caesar dressing and plenty of Parmesan without requiring you to make the dressing or bread the chicken yourself.

What you’ll need

  • Breaded chicken tenders or crispy chicken strips
  • Romaine lettuce
  • Caesar dressing
  • Parmesan cheese, freshly grated
  • Croutons
  • Olive oil
  • Salt and black pepper
  • Optional: bacon or crispy lamb bacon

How to make it

Cook the breaded chicken according to the package instructions until golden and crispy. While it cooks, chop the romaine lettuce and add it to a large bowl.

Toss the lettuce with Caesar dressing, then add the crispy chicken, croutons and plenty of freshly grated Parmesan. Finish with a little black pepper and, if you’re using it, crispy bacon.

Why it’s so lazy: The chicken is doing all the cooking while everything else is literally just opening, chopping and tossing. No homemade dressing, no breading chicken from scratch and no complicated side dishes.

Lazy girl shortcut: Buy ready-made breaded chicken tenders, bottled Caesar dressing and pre-washed romaine. We are absolutely not making Caesar dressing from scratch on a weeknight. If your chicken is already cooked, this dinner is basically an assembly job.

Healthy dinner recipes don’t have to mean boring complicated dinner recipes.

And honestly, that’s what I love about this list.

Some nights you have the energy to cook. Some nights you’re eating pesto pasta straight from the bowl while watching something you’ve already seen three times. Both are valid.

Save these healthy recipes for dinner for the next time you’re tempted to order takeout because you can’t be bothered to cook.

The goal is simply to have a few easy meals in your back pocket so “I don’t feel like cooking” doesn’t automatically become “I’ll just order something.”
